For the lentils:
Step 1: Rinse the Lentils
Rinse the lentils in cold water 2–3 times until the water runs clear. Drain and set aside.
Step 2: Boil the Lentils
Place lentils in a saucepan with turmeric, salt, Curry Powder, Chili powder, Onion, Garlic, Cinnamon, Green Chilies, Fenugreek, Curry Leaves, Pandan leaves and 3rd milk of Coconut just to cover the dhal. Bring to a boil, then reduce heat and simmer for 10–15 minutes until soft. Stir occasionally. For a smoother texture, mash lightly.
Step 3: Add Coconut Milk
Stir in 1st coconut milk and let the dhal simmer on low for another 5 minutes. Adjust salt as needed.
Step 5: Serve
Serve hot with steamed rice, roti, or alongside other curries.
